We had the good fortune of connecting with Chef Mimmo Alboumeh and we’ve shared our conversation below.

Hi Mimmo, maybe we can start at the very start – the idea – how did you come up with the idea for your business?

I wanted to create the next generation by blending the food I love, which is Spanish and Mexican.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
The unconditional passion and love I have for the hospitality industry. I love what I do, and I believe it shows up at work with our my employees and our my customers. Authentic, family, togetherness and everyone is welcome. And we prepare our food the same way – – with passion and love. 

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
The patio at Little Alley Steak, Kyma, Versano Pizza and Rathbun Steak are among my favorites. I We love the N. Georgia mountains and Bryson City, NC. 

Who else deserves some credit and recognition?
Big shout out to my A Team. Opening Botica requires huge dedication and my management team is my family. I can count on them and they can count on me.
