We had the good fortune of connecting with Laura Solomon and we’ve shared our conversation below.

Hi Laura, is your business focused on helping the community? If so, how?
Tybee Oyster Company believes in the value of local food and sustainability in all things. We work hard to have a great team that lives the mission, that is dedicated to their craft, and cares about the local community. Our oysters provide ecosystem services by filtering water and creating habitat for other species. We also have a partner non-profit focused on place based educational outreach, using the oyster as a role model for protecting our coastal ecosystem.

What should our readers know about your business?
My husband and I started Tybee Oyster Company in 2022. We struggled with the regulatory process and finally started selling oysters in 2024. Floating oyster farming is labor and capital intensive and we have continued to scale as we grow. Being a start up company with significant dependance on the natural environment is a challenge, but one that all farmers – dirt or water – have faced forever. It is empowering to know that people have done this before and come out unscathed! Telling our story, sharing our oysters with the community, and seeing their enthusiasm about the process and the produce keeps us going.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Our adventure would definitely be food-centric. Savannah has really come up as a great food scene recently and there are a ton of great spots. The trip would also include a boat ride, at high tide, through all of the fun creeks in little Tybee, ideally ending with a moon rise.

My family and everyone that has made me feel empowered along the way.
