We had the good fortune of connecting with Quay Chapman and we’ve shared our conversation below.

Hi Quay, what was your thought process behind starting your own business?
My thought process has always been building something that belongs to me. I want to be able to pass it down to my kids one day if I’m lucky enough to have some.

 

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I like to say I’m a jack of all trades, career wise I’m a sponge I soak in as much knowledge and different cuisines so I’m not just trapped in one thing. I am where I am today through just family values I grew up an only child to a single mother so I had to grow up fast, learning how to cook for myself and my mother while she works or sleep. I went to a vocational high school to begin my career as a chef then from that point went to Johnson & Wales to get further education and my degree. Cooking alway seem to come easy to me so it was an obvious choice but I definitely had a few bumps in the road and a few time I started to rethink my career choices. After a real good self realization I knew I couldn’t just give up something that I was passionate about and I knew was my calling so I revamped how I view the grind of it all. A lesson I learned was definitely be patient and not rush the process or compare my success to anothers. I want the world to know that I was born to cook and hustle. My food doesn’t just fill your stomach it takes you back to good home cooking, once you have a bite you always are going to want more.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Aww man that’s a tough one it so much to do and so much culture that there no way you can just experience in a week. Definitely have to experience any festival or 98 jam concert it’s always a vibe. The trap museum is always something to go to them the photo opps and learn something new.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My mother definitely gets the biggest shout out after the big man upstairs of course. I do want to thank everyone that has been apart of my journey good or bad every interaction paved who I am today.
