We had the good fortune of connecting with Vic Bernardini and we’ve shared our conversation below.
Hi Vic, is there something that you feel is most responsible for your success?
As owners, we are present at the restaurant and an integral part of preparing and delivering our food every day. Pizzeria Lucca’s success can be attributed to a relentless focus on three things: 1. Providing exceptional food to every guest. 2. Hiring, training and developing excellent business processes to deliver exceptional service to every guest. 3. Maintaining an exceptionally clean restaurant. We have achieved three perfect health inspections and maintain the restaurant inspection ready at all times.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Pizzeria Lucca is a standalone, Neapolitan pizzeria in historic Roswell. We are located just off Roswell’s historic square in a lovely white building with great porches for outdoor dining. We have 15+ pizzas on the menu, we offer fabulous appetizers and salads, wine, beer, boutique Italian groceries and great desserts, but pizza is the unmistakable focus. We have three brick ovens, imported from Naples, Italy and a team of pizza makers trained in making old-world, thin crust, oven baked pies. All of our ingredients are fresh, imported directly from Italy or sourced locally from the finest makers of flour, cheese, tomatoes, basil, etc., What sets us apart is an absolute commitment to being the best. We look for opportunities to continuously improve and we focus on small details. The difference for us between mediocrity and excellence is in the small details. Doing what we do well, takes time and we do not take short cuts. For example, our dough is made daily and proofs for three days before going into production. We manually crush our tomatoes and prepare all key ingredients in-house. Our purpose in life is to provide an eating experience that is completely grounded in old-world traditions that is both utterly satisfying and memorable. We achieved success because we educated ourselves on food and business, but we had the passion for taking care of people from the start. We have always known what we wanted to be and we relentlessly focus on providing an exceptional product, service and clean environment every day.
Any great local spots you’d like to shoutout?
If we had a guest visiting, we would of course take them to Pizzeria Lucca to show them how fabulous, authentic Neapolitan pizza truly can be… we would give them a tour of the kitchen area and show them the care we take in baking a pizza to perfection in an oven that is close to 1000 degrees F. We would also take our guest to other great dining spots with unique food and dining experiences. Some of our favorites would include Taqueria del Sol in Midtown, Arepa Mia in Decatur, Taqueria Tsunami in Marietta Square, Buckhead Diner and Fago de Chao in Buckhead, or Pasta Pulcinella downtown. For recreation, we would take them for some hikes in the N. Ga mountains, or horse back riding. We love quick visits to the Highlands in NC, or drives to small towns to explore family owned stores, restaurants and boutiques.
The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My former employer was a privately held company that grew to $1 billion in sales. The founder, Burt Sperber, was a remarkable man who always said, “we only have one reputation and it must be protected in every action we take.” I think this is a very powerful lesson and something my wife and I think about every day at Pizzeria Lucca.
