We had the good fortune of connecting with Amber Maxwell and we’ve shared our conversation below.

Hi Amber, why did you pursue a creative career?
The number one thing that made me want to pursue an egg roll business is the passion I have for it. I’m a person that will lose interest quickly, but this really stayed with me.

What should our readers know about your business?
Well I am currently a Manager at an Emergency Veterinary Hospital. I have always wanted to start a business, but I was unsure of what I wanted it to be. I went through all of the things I’m interested in and cooking stood out immediately. I’ve always loved creative cooking, like turning leftovers into a completely different meal. I started making egg rolls years ago, but thought nothing it of besides it just being something different. Now here we are with Eastside Egg Rollz and it has been life changing. People love good food!

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
I’m such a East Atlanta kid lol! I still think everyone needs to at least go to JJs Fish and Chicken and American Deli. I spend a lot of my time entertaining a new found hobby, which is pole fitness. I go to The Milan Method Pole Dance Fitness Studio. I try to get every woman I come across to get that amazing experience.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I would love to shoutout my night team at The Village Vets of Decatur ER for all the late night brain picking for ideas! I want to shoutout The Milan Method Pole Dance Fitness Studio for supporting Eastside Egg Rollz EVERY week! Shoutout to my husband Kendrick who has been my rock from day 1. Shoutout to my family who supports everything that I do!
