We had the good fortune of connecting with Krystal Alexander and we’ve shared our conversation below.

Hi Krystal, we’d love to hear more about how you thought about starting your own business?
I love to cook and I’m an avid foodie. So why not open a business and offer the community something different. Brisket is something I absolutely love and wanted to try it with a quesadilla and it it was love at first bite. So that’s when the dream came in mind. 

What should our readers know about your business?

Casa Dilla Food Truck is a love of BBQ and Quesadillas all in one. Fresh smoked brisket and a choice between 4 different cheeses. The cheese choice brings it to a whole different level. Fresh peppers, onions and cilantro gives it that flavor you love but the smoke gives it a flavor people crave. When we decided to add wings to the menu, I wanted to be different, so we smoke those as well and then fry them to order. Those wings tossed in the sauce is what our quesadillas are in competition with. The fact that I built out my trailer myself is what I am most proud of and it wasn’t easy. Everything was built from the ground up and out of pocket, so there were times when I wanted to give up but had already sacrificed so much. I didn’t have savings set up to build this dream, I just woke up one day and said I’m doing it now. The thing I have learned along the way is to have a plan. With a plan, anything is possible. But if you don’t have a plan don’t let it stop you.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
This is a hard one. Breakfast at Homegrown, lunch at Iron Age, a few beers at Wild Heaven Beer and then a game of pool at Chairs Up Stairs. These places feel like home no matter what day you go.

Who else deserves some credit and recognition?

First and foremost I have to thank God. Secondly my grandfather who instilled in me the values that I hold dear to my heart. My aunt who took me in after the passing of my mother and grandfather, My husband Doug who owns Kal Automotive Repair that showed me, business ownership is possible and having my back in all my decisions. My mother in law who holds us altogether and last but not least my old boss, Tiffany Jordan Owner of Pinnacle EMS who entrusted me with running her business and showed me that little black girls can have their own and run a family too.
