Meet Sophia Davila | Pastry Chef and Content Creator

We had the good fortune of connecting with Sophia Davila and we’ve shared our conversation below.
Hi Sophia, what’s the most important lesson your business/career has taught you?
The most important lesson my career has ever taught me, is that people won’t care, until they know you care about them.
This is applicable to many things but as someone who has spent the entirety of her career in hospitality, I have seen the impact caring truly makes.
When you go out of your way to be genuine, to form relationships based on giving rather than always receiving and look for ways to improve other’s experience, something very beautiful happens.

Let’s talk shop? Tell us more about your career, what can you share with our community?
My journey has taken many twists and turns. It started as a child, standing on a kitchen chair to reach the stove and then led receiving formal pastry training in Lucerne, Switzerland, working in restaurants, hotels, and most recently led to social media work and popups.
I believe my ability to create in many different mediums sets me apart. When I began my culinary career, I believed there was a singular path for pastry chefs, and it was to work in a traditional kitchen. However, as I’ve continued to practice my art, I have discovered many more applications for it. From private events, creation of works for brands and magazines, to social media work, there has never been a more thrilling time to be a chef!
Like anything worth doing in life, there have been the typical setbacks along the way, but I would honestly say that my biggest challenge is no longer having a set career path to follow, as I have decided to forge my own. There’s not an instruction manual for a “culinary studio” but I am enjoying figuring it out, as scary as that might be for the perfectionist in me.
The biggest lesson I have learned is to be consistent and to embrace failure. Not everything is going to be a success and I’m learning to be okay with that. Failure will always be preferable to paralysis and stagnation.
If there is one thing I want people to know about my story and brand, it is that I desire to always take a sincere approach to life and creating. This is why I went with the name “Sincerely Sophia” for my brand. I am writing my love letter to life and food…and having so much fun while doing it!

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Oh my goodness, what a fun question! So most of my itineraries are very food focused.
Okay, first for breakfast we would go to Evergreen Butcher and Bakery or we would go to Academy and get their breakfast sandwich/coffee and then walk around ViHi. Next, for lunch we’d go Pollo Primo, Staplehouse or Ponce City Market and as for dinner…definitely Del Bar Inman Park, Gigis or Miller Union. Lastly if they drink, I would also take them to Palo Santo or Mid City ATL.
Since they are here for a week I’d gleefully take them to the GA aquarium, EAV, the High museum, the Dekalb Farmers Market, and would have to show them Eddies Attic…and if they still have energy after that…maybe a walk around the beltline?

Who else deserves some credit and recognition?
I’d like to dedicate my shoutout to my friends and family. Since moving to Atlanta, they have shown up in the most loving ways, from doing dishes at my popups, helping design logos, photo shoots, video editing, and even taking shifts at venues where I am working so that I always see a familiar face. I feel so fortunate to be surrounded by individuals who are this supportive.
