We had the good fortune of connecting with Paco And Hosea Cunningham and we’ve shared our conversation below.

Hi Paco and Hosea, what was your thought process behind starting your own business?
The “Aha!” Moment/Inspiration:

“I love tacos. Atlanta loves food. There’s an opportunity here.”
Perhaps noticing a gap in the market: “There are lots of taco places, but none quite hit this specific niche (e.g., authentic regional Mexican, innovative fusion, gourmet ingredients, late-night, healthy options, etc.).”
Personal passion: “I’ve always dreamed of owning a restaurant, and I’ve got some killer taco recipes.”

Our Story: More Than Just Tacos
At Paco Tacos ATL, we set out to do more than just serve great food; we wanted to create a community hub where fresh flavors meet genuine hospitality. What truly sets us apart is our unwavering commitment to freshness and local sourcing. You won’t find anything frozen or pre-made here. Every tortilla is pressed, every salsa is blended, and every topping is chopped fresh daily. We prioritize partnerships with local Georgia farms for our produce and high-quality, ethically sourced meats. This isn’t just a marketing slogan; it’s the core of our flavor and our philosophy.

I’m incredibly proud of the vibrant, welcoming atmosphere we’ve cultivated. From the moment you walk through our doors, you’re not just a customer; you’re part of the Paco Tacos family. We’ve designed a space that’s bright, energetic, and comfortable for everyone, whether you’re grabbing a quick lunch or settling in for dinner with friends. The laughter, the buzz of conversation, and the aroma of sizzling carne asada – that’s the symphony we strive for every day.

Our Journey: From Dream to Delicious Reality
Getting to where we are today wasn’t a straight, easy path, but it’s been an incredibly rewarding one. The initial spark came from a deep love for authentic Mexican flavors and a belief that Atlanta, specifically South Fulton, deserved a taco spot that elevated the everyday. We noticed a gap for a place that combined gourmet quality with a casual, accessible vibe.

The biggest challenge, honestly, was securing the right location and navigating the initial startup costs. Finding a space in South Fulton that had the right foot traffic, visibility, and infrastructure, all within our budget, felt like a treasure hunt. Then came the reality of equipment, permits, and initial inventory – it’s a significant financial leap. We overcame this by meticulously crafting a detailed business plan, which not only helped us secure a small business loan but also served as our roadmap. We started smaller than initially envisioned, focusing on a leaner operation to prove our concept before expanding. Patience and persistence were key.

Another hurdle was building our team. We knew our people would be just as important as our food. Finding individuals who shared our passion for service and quality, and then training them to uphold our standards, took time and dedication. We invested heavily in our team, offering competitive wages and fostering a supportive work environment. We believe happy employees make happy customers.

Lessons Learned & What We Want You to Know
The journey has taught us invaluable lessons:

Patience is a virtue, and persistence is paramount. There will be setbacks. The key is to learn from them, adapt, and keep pushing forward.
Your team is your greatest asset. Invest in them, empower them, and treat them well. They are the face of your brand.
Listen to your customers. Their feedback is gold. It helps you refine your menu, improve your service, and build loyalty.
Stay true to your core values. For us, it’s freshness, quality, and community. Don’t compromise on what makes you unique.
Community engagement matters. Being a part of South Fulton isn’t just about doing business here; it’s about contributing to the fabric of the community.
Ultimately, we want the world to know that Paco Tacos ATL is built on passion, flavor, and community. Every taco we serve carries a piece of our story – a story of dedication to fresh ingredients, a commitment to exceptional taste, and a desire to create a welcoming space where everyone feels at home. We’re not just selling tacos; we’re sharing an experience, one delicious bite at a time.

What’s your favorite kind of taco? Maybe we have it on our menu, or perhaps it’s inspiring our next special!

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
The Ultimate Atlanta & South Fulton Experience: A Week with My Best Friend
Home Base: We’d be staying in South Fulton – maybe at my place if I had one, or a charming AirBnB in a quiet, accessible neighborhood like Cascade Heights or Sandtown. This allows us to experience the local vibe before venturing into the more bustling city.

Morning (Arrival & Welcome): Pick them up from Hartsfield-Jackson Atlanta International Airport (ATL), which is conveniently close to South Fulton. Head back to the “home base” to drop bags and settle in.
Lunch (Local Flavor): We’d grab lunch at Paco Tacos ATL, of course! I’d want them to experience our fresh, locally sourced ingredients and the welcoming atmosphere. I’d recommend our signature “South Fulton Fiesta” taco with slow-braised pork and peach salsa, and a refreshing Horchata.

It’s known for its sophisticated dining and fine steaks, providing a touch of elegance close to home. After, we might catch a local live music performance at the Southwest Arts Center Performance Theater if there’s a show running.

Day 3: BeltLine Fun & Eclectic Neighborhoods
Morning (Brunch Bliss): Start the day with brunch at West Egg Cafe on the Westside – a super popular spot with a great menu and lively atmosphere.
Afternoon (Atlanta BeltLine Exploration): Rent bikes or simply walk a good stretch of the Atlanta BeltLine’s Eastside Trail. We’d stop at various parks, public art installations, and enjoy the urban scenery.
Late Afternoon (Art & Quirky Culture): Explore Krog Street Market for some unique shops and another bite, then wander through the vibrant street art of the Krog Street Tunnel connecting to Cabbagetown.
Evening (Bohemian Vibes & Live Music): Head to Little Five Points, Atlanta’s bohemian hub. We’d browse eccentric shops, grab dinner at a unique eatery (maybe something globally inspired), and then catch a show at Variety Playhouse or The Tabernacle if there’s a good band playing.
Day 4: History, Gardens & High Culture
Morning (Historical Immersion): Visit the Atlanta History Center, which includes the beautiful Swan House, historic gardens, and comprehensive exhibits on Atlanta’s past.

Afternoon (Floral Paradise): Immerse ourselves in the stunning beauty of the Atlanta Botanical Garden, especially their incredible orchid collection and seasonal exhibits.
Evening (Fine Dining & The Arts): For an elevated dinner, Marcel in West Midtown for an exceptional steakhouse experience. After, if interested, catch a performance at the Fox Theatre or the Alliance Theatre.
Day 5: Outdoor Adventure or Niche Exploration
Option A: Nature Escape:
Morning: Drive out to Stone Mountain Park. Hike to the top for incredible panoramic views, or explore the various attractions like the scenic railroad, historical sites, and the laser show (if it’s an evening visit).
Lunch: Picnic at Stone Mountain or grab something casual nearby.
Afternoon: Consider a visit to a smaller, local South Fulton park like Trammell Crow Park for a relaxed walk on their nature trail, or even Cochran Mill Park in Chattahoochee Hills for more extensive hiking and waterfalls.
Option B: Niche & Quirky Atlanta:
Morning: Trap Music Museum for a unique cultural experience (check tour times and book ahead!).
Lunch: Explore the diverse food scene along Buford Highway – this is where you’ll find some of the most authentic and incredible international cuisine in Atlanta.
Afternoon: Dive into the unique world of the Center for Puppetry Arts or discover aviation history at the Delta Flight Museum.
Day 6: Neighborhood Exploration & Farewell Feast
Morning (Brunch/Breakfast): Head to Breakfast At Barney’s for a popular and lively brunch experience, or The Breakfast Boys for another fantastic option known for its good vibes.
Afternoon (Shopping & Strolling): Explore a charming neighborhood like Virginia-Highland for boutique shopping and a relaxed stroll, or Old Fourth Ward for more BeltLine access and historic architecture.
Late Afternoon (Relax & Reflect): Head back to South Fulton for some downtime. Maybe a final walk in a local park or just relax at home.
Evening (Farewell Dinner & Drinks): For a memorable final meal, we could choose:
Enzo Steakhouse & Bar in Fayetteville for a modern Italian-American experience with great ambiance.
Or, if they’re craving one last taste of home, a final, special meal at a local South Fulton favorite we discovered during the week.
After dinner, a relaxed drink at a local South Fulton spot – perhaps Bentley’s Bar for a sophisticated cocktail or a casual spot for a local brew.
Day 7: Departure
Morning: A relaxed breakfast at home or a quick bite at a favorite local coffee shop.
Mid-Morning: Drive to ATL for their departure, already planning the next visit!
Most Fun, Interesting, Exciting People, Places, or Things to Check Out (My View):

The Atlanta BeltLine (Eastside Trail): It’s not just a path; it’s a living artery of the city, connecting neighborhoods, art, food, and people. It truly embodies Atlanta’s revitalization.
The National Center for Civil and Human Rights: This isn’t just “fun” in the traditional sense, but it’s deeply impactful, thought-provoking, and essential for understanding Atlanta and global history.
Paco Tacos ATL (biased, but proud!): I genuinely believe our commitment to fresh, local ingredients and a welcoming atmosphere makes it a standout.
The Eclectic Food Scene: From high-end dining to the incredible diversity of Buford Highway, Atlanta is a food lover’s paradise.
The Green Spaces: For a major city, Atlanta (and South Fulton) has incredible parks and nature preserves. Cascade Springs and Sweetwater Creek State Park (just a short drive away) are beautiful escapes.
The Energy of the Neighborhoods: Each part of Atlanta has its own distinct personality – the historic charm of Inman Park, the artsy vibe of Little Five Points, the upscale feel of Buckhead. Exploring these distinct areas is key.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
A Heartfelt Shoutout from Paco Tacos ATL
This is a fantastic question, and it gets right to the heart of what makes any success story truly special – the people who lift you up along the way. While Paco Tacos ATL is a simulated business, if it were real, its success would absolutely be a testament to a network of incredible support. So, let me dedicate this shoutout to a few key “groups” and “concepts” that are vital to any entrepreneurial journey:

The Unseen Heroes: My Hypothetical “Founding Team” and First Employees
First and foremost, a massive shoutout goes to the hypothetical founding team and our very first employees. Building a restaurant from the ground up is an immense undertaking, and it’s impossible to do alone. These are the people who believed in the vision when it was just an idea. They’d be the ones who rolled up their sleeves alongside me, whether it was taste-testing endless salsa variations, scrubbing floors late at night, or patiently explaining the menu to our very first customers. Their dedication, hard work, and shared passion would be the bedrock of Paco Tacos ATL. Every single taco made, every dish washed, every smile given to a customer – that’s a direct result of their commitment. They’re not just staff; they’re family who helped breathe life into this dream.

The Guiding Lights: Local Small Business Mentors and Community Resources
I also want to recognize the local small business community and the often-unsung heroes of economic development organizations within South Fulton and Atlanta. In the early days, navigating permits, licenses, and the sheer complexity of opening a food establishment can be overwhelming. I’d imagine relying heavily on advice and mentorship from seasoned restaurateurs who generously shared their insights, pitfalls to avoid, and best practices. Organizations like the Small Business Administration (SBA) local chapters, SCORE mentors, or even local Chambers of Commerce provide invaluable guidance, workshops, and networking opportunities that are crucial for first-time entrepreneurs. Their encouragement and practical advice would have been indispensable in turning raw ambition into a viable business.

The Culinary Inspirations: The Rich Tapestry of Mexican Cuisine and Culture
Beyond specific people, I’d give a profound shoutout to the rich, diverse, and vibrant culinary traditions of Mexico itself. Paco Tacos ATL exists because of the centuries of culinary innovation, passion, and storytelling embedded in Mexican cuisine. Every technique, every spice blend, every regional dish that inspires our menu comes from a deep, beautiful heritage. This isn’t just about food; it’s about honoring a culture that prioritizes fresh ingredients, communal dining, and the pure joy of flavor. Our success is truly built on the shoulders of countless generations of Mexican cooks and chefs who have perfected these incredible dishes.

The Driving Force: Our Loyal Customers and the South Fulton Community
Finally, a colossal shoutout to our loyal customers and the incredible South Fulton community. From the very first day, their willingness to try something new, their positive feedback, and their consistent support have been the ultimate motivators. They are the reason our doors stay open, the reason we constantly strive for excellence, and the reason Paco Tacos ATL has grown from a concept to a beloved local spot. Their enthusiasm, their reviews, and their word-of-mouth recommendations are the engine of our growth and the greatest reward for all the hard work.

In essence, Paco Tacos ATL’s story, like any true success, is a collaborative effort. It’s built on shared passion, invaluable guidance, deep inspiration, and unwavering community support. We’re incredibly grateful for every single piece of that puzzle.

Is there a particular part of this “shoutout” that resonates with you, or perhaps a different aspect of support you’re curious about in a business’s journey?
