We had the good fortune of connecting with Osiris Trejo and we’ve shared our conversation below.

Hi Osiris, can you share a quote or affirmation with us?
“Your purpose is greater than the fear that limits you” is one of my favorite quotes. I started my business not knowing how much I would make, or if it would succeed. I started it because it was my purpose and I had faith in God that it was my calling. Cooking is one of the things in life that feels as easy as walking and breathing. It feels like a dance I already know. Of course things come with practice, but when you love it you only hone your purpose and it’s a wonderful feeling.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I’m a private chef and owner of 1947 Kitchen. The name 1947 Kitchen came about because it’s the year my grandmother was born. I wanted her legacy in my business to ensure she lives forever in my cooking. I began taking culinary classes in high-school, where chef Cooper Sweat honed my enthusiasm for cooking. I then decided I wanted to pursue culinary as a career and went to college. I graduated in the year 2023 from Gwinnett Tech with my degree in Culinary Arts. I had many jobs before, specifically in catering. As a teenager I would go and meet with chefs from wineries in north G.A and work with them for free. I would drive 1-2 hours and stage for hours just to see what it was like to be a chef. I knew I wanted to be like them. I was the happiest when cooking and being in the kitchen. I’ve done my time with waiting tables, washing dishes, being a line cook, to setting up events. I’ve done every position with grace and happiness and I think that is what sets my company apart. I am not only a private chef, I’m an event planner, organizer, florist, dishwasher and all the above. When you book me you get an experience. I love creating beautiful events as much as I love to create beautiful dishes!

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
I really love the nature and outdoors so would definitely take them around the canton parks to do some running or walking. Downtown Woodstock is an amazing spot to eat some great food and share some drinks. I always meet the sweetest people there and have even been a featured chef at Deep Roots, cooking for a wine tasting!

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My credit goes to every chef I met throughout my life that now has a little piece in my cooking. My first job was at Chef Kerns, a southern catering company. I learned so much from there and how to uphold my standards when it comes to cooking, as well as every other job I had.
Lastly I give a shoutout to my Mexican roots and family. I will always have a flare in my cooking that has been passed down from generations of amazing women. I believe hospitality is just as crucial to becoming a great chef and to love the people you cook for.
