We had the good fortune of connecting with Rolicia McKeller and we’ve shared our conversation below.

Hi Rolicia, how did you come up with the idea for your business?
I actually came up with the idea for my business one day after leaving my full-time job.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
My business “Ro’s Famous Chicken Salad and Catering” has been in business for 6 years now. What I feel that sets us apart from others are our stellar customer service. I believe wholeheartedly that the way you make a customer feel while servicing them, is as much important as how the food taste. Along with the stellar customer service we offer some of the most amazing finger foods. However, we have started to expand our menu for 2024 and we are most proud of that.

How we got to where we are today is by taking the stairs. I remember year three of my business, I wanted a brick and mortar, “I wanted a building”. Looking back now, I couldn’t manage a building. I was still learning the logistic of the business. I needed to learn more marketing, financial management and business planning. Has the road been easy you asked, definitely not, but it’s been worth the journey.

I want the world to know that- YOU ARE YOUR BRAND! Always remember that.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
The city of Birmingham is filled with great southern food, vibrant festivals and its cultural impact. I would take my friend each morning to breakfast or brunch. On her first day we would visit “Yō Mama’s in the downtown Birmingham area. I would recommend her to get the over-the-top chicken and waffles. We would then check out the historical Birmingham Civil Rights Institute.

On the following day we would visit Ruby Sunshine, a phenomenal brunch spot. They offer a variety of foods. Following we would visit Red Mountain Park, to walk off some of those calories. lol. Red Mountain is one of my favorite hiking places that offer super views, tree houses lol, ziplining and a peaceful atmosphere. We would later go to dinner at one of my favorite chill spots called EAST WEST. The wings and duck nachos are top tier. One the next day I would prefer a healthier breakfast and dinner, I like to be balanced. That day we would go to ‘First Watch’ for a Bacado omelet that’s under 800 calories. For dinner we would go to Brick Tops for maybe some Trout and veggies. For fun we would check to see if there are any upcoming baseball games being played at Regions field. We could also visit the Birmingham Botanical Gardens.

Our final day we would visit Metro Diner for breakfast. They have the best shrimp and grits and Roast and grits. Following if it’s the summer months, we would visit the Market at Pepper Place. Everything is locally sourced, from the produce, baked goods, flowers, to the craftsmen. This is a pet friendly, family friendly environment with live music as well.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I would like to first give a shoutout to my daddy God. He’s been so faithful during these 6 years of business. I would also like to thank my family, friends and my continued customers that have supported me over the years.
