We had the good fortune of connecting with Priscilla & Tim Morrison and we’ve shared our conversation below.
Hi Priscilla & Tim, what is the most important factor behind your success?
We are sharing desserts based upon how our own blood sugar levels react. Keep in mind every body is different and reacts differently.
Any food put into one’s body–because it provides energy–affects blood sugar levels. We use natural sweeteners extracted from fruits like apples, prunes & dates, so that blood sugar spikes are reduced and resolve quickly.
The best part of our sweeteners compared to erythritol, monk fruit or stevia, or especially sweeteners with sugar alcohols, is there is no funky aftertaste or mouth feel.
We also use freeze dried fruit and vegetable powders for natural flavor and color, like strawberry / guava / banana / taro / pumpkin, etc. Mixing these in small amounts with our cake batter allows us to utilize a natural ingredient but also keep the carbohydrates down.
If it’s not something we would eat, we won’t offer it.
It’s extremely important to us to offer different flavors weekly to always present a variety. Some of the “ketofied” flavors we offer are Ube, Banoffee, Tiramisu, Strawberry Shortcake and many more. But should our customers find something they really want, they can always feel free to order from our local online store.
Alright, so for those in our community who might not be familiar with your business, can you tell us more?
We both have careers in Healthcare IT, so baking is a great creative outlet for us! Also, it’s hard being diabetic and having a sweet tooth! We are both diabetic (Type 1 and Type 2) and were frequently disappointed by keto / sugar free desserts that we’d try and agreed that we could probably make it better.
Offering our homemade treats at the Farmers Market is our way of sharing how delicious keto and sugar free desserts can be. Even those who aren’t diabetic or following a special diet have expressed joy in our desserts. It’s a plus that our keto desserts are gluten free.
We love coming up with new flavors and combinations inspired by things we enjoyed from our childhood and also trying to make a trending dessert/flavors in a healthy way. It can be super exciting especially when a flavor gets a reaction from our customers when they sample a bite! Seeing people who need to follow a special diet–by choice or because of a condition–be able to experience something so delicious that they missed or thought they could never have, it’s heartwarming!
We also love getting feedback about what people like and dislike about our treats. As a business owner, it’s important to listen to your customers’ responses, and do not take their dislikes personally. All opinions are subjective, but can it help you make something better? Abso-freakin-lutely!
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
We are foodies, so here’s our delicious dream itinerary! Go to Alpharetta Farmers Market on Saturday mornings for Vanilla Crepes (if you’re not keto), quesadillas, baked goods, and locally-sourced produce! You cannot go wrong with ANY type of BBQ in Georgia. Jack’s Feed Store or Smokejack BBQ in Alpharetta. KPop Korean BBQ locations in Woodstock and Canton are also amazing! Fox Bros BBQ in Midtown Atlanta is always delicious. For mouth-watering desserts and divine coffee, go to Cafe Internezzo. Vincent Bakery and Paris Bakery have delicious unique offerings.
