We had the good fortune of connecting with Paul Jaraysi and we’ve shared our conversation below.

Hi Paul, the decisions we make often shape our story in profound ways. What was one of the most difficult decisions you’ve had to make?
One of the hardest decisions I’ve ever made was choosing to stay in the game when everything in me wanted to walk away. Running a restaurant isn’t just about food—it’s about leadership, sacrifice, and pressure from all directions. There were moments I was mentally and emotionally drained, watching everything pile on—financial stress, staffing issues, long hours, constant fires to put out. It felt like no matter how hard I pushed, the progress was slow, and quitting started to sound like relief.
But I had to ask myself—what if I actually make it work? That question kept me going. I realized I wasn’t just doing this for myself. I had a team depending on me, a community that was starting to believe in what we were building, and a dream that deserved a real shot. So I doubled down, leaned into the pressure, and chose to figure it out no matter how heavy it got. That decision to keep pushing—when it would’ve been easier to fold—changed everything.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Layaly is more than just a restaurant—it’s a story of family, resilience, and relentless learning. My dad started Layaly in 2021 after dreaming of opening a restaurant since 2012. But by 2023, it was failing. I made the decision to step in and take over, even though I had zero restaurant experience—and had just quit my real estate career to do it.

It wasn’t easy. There were moments I seriously wanted to quit. I went through long stretches of not making any money, and the pressure felt overwhelming. But I committed. I studied the business, visited competitors, observed everything, and constantly adapted until something finally worked.

What sets Layaly apart is the passion and energy we pour into the space every single day. We’re not just serving food—we’re sharing dishes our people grew up on. Guests often tell us the food makes them feel emotional—like they’re back at their grandmother’s table or home for the holidays. That kind of connection is rare, and we don’t take it lightly.

We lead with heart. From the flavors to the hospitality to the atmosphere, everything is intentional. Our team cares deeply about the experience we create. Layaly is warm, authentic, and alive with culture.

If there’s one thing I want people to know, it’s that you don’t need to have it all figured out—you just need to care enough to keep going. I left a career behind, took a risk, and bet on myself. Layaly is the result of that leap—and we’re just getting started.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
First, my father has played a huge role. He gave me the tools I needed to succeed and instilled in me the importance of working hard, staying focused, and pushing through challenges. My mother’s support has been just as important—always being there, believing in me, and helping keep things grounded.

My brother Peter—aka The Slam Dunk Attorney—deserves a big shoutout. He’s constantly sharing business advice, fresh ideas, and encouragement. Having someone close to me who understands both business and mindset has been invaluable.

And of course, my team. They show up every day ready to work hard, bring good energy, and help create a great experience for our guests. Running a business is never a solo effort, and I’m grateful for each person who contributes to making it all happen.
