Meet Joseph Aguirre | Owner Of Thinking Tacos LLC


We had the good fortune of connecting with Joseph Aguirre and we’ve shared our conversation below.
Hi Joseph, what was your thought process behind starting your own business?
I moved to Boise from Las Vegas in Jan 2016. One thing that jumped out to me downtown were the food vendors outside. One thing I noticed they didnt have were street tacos. I had a friend whos a 5 star chef with a catering business at the time and he had a food cart he hardly used. I began to feed the thought we could use it downtown for tacos. He was wrapped up with business so I took it on myself. I was in a garage with the cart coming up with different taco names for the business then finally it hit me. I blurted out THINKING TACOS! My friend said what? Why? I said because when people ask what you want to eat, you say I’m thinking a burger or a steak or I’m THINKING TACOS?! That’s how the we came to be and yes the question mark is apart of our name.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Our first night out on the town was July 15, 2017. We setup right in front of city hall Downtown Boise. I started as a street food vendor Downtown, then learned of different bars and breweries hosting food trucks and food carts. I began to do pop ups here and there and slowly got into catering as well. I now do pop ups, special events, concerts, festivals and catering all around the Treasure Valley. To this date our following on social media is stronger than ever and we also have a name for our following called TACO GANG! Our specialty and what makes us unique from others in Boise is that we serve Quesatacos & Mulitacos. A Quesataco is a quesadilla taco, like a traditional taco but cheese in between the tortillas and your choice of protein served on top. A Mulitaco is similar to a quesataco but not only is the meat on top but inside as well. These are definitely a crowd favorite. We are currently the only ones serving Quesatacos and Mulitacos in town! We love our fans and our fans love us!! Without the TACO GANG we wouldn’t be here!
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
First off I would bring them in to have our delicious tacos at Thinking Tacos?. I’m a huge foodie myself so we would have to visit a few places with good eats. I would list Biscuits & Hogs for breakfast platters with huge portions. Tangos for authentic Argentinian Empanadas. Madhuban for the best Indian Cuisine. Yoi Tomo for the all you can eat sushi and apps. The Goodness Land for the best Mediterranean food. Esperanzas Bakery for homemade Tamales. I could fill up in no time with all these places.
For fun and drinks I would recommend Dave & Busters and Big Al’s bowling alley. They have the best arcade games, bowling and billiards.
For sight seeing I would say Bogus Basin they’re known for their winter fun and ski lift. They also have the mountain coaster which is similar to a roller coaster just much slower but goes all thru the mountain side. Table Rock has the most beautiful views as far as the eye can see. Lucky Peak Lake for fun in the sun and any water sports you can think of. The Greenbelt is Boise’s longest river and access to runway along side it that can cross the city. Downtown is where all the bars and clubs are for the night life action. Boise is a small place and not known for entertainment but if you look hard enough you can find something.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
First off I thank my Sister Briana for recommending me to Shout-out Atlanta and all of her support. My family has been very supportive since I began this journey including my mother Diana. I would also shout-out my brothers David, Jr and Alex. They came out here to help me along the way and David still does till this day. I’d like to shout-out and give thanks to my friend Jon Cloud for being there and being the true solid back bone that I needed to get this thing off the ground. I couldn’t have done it without him. One of my biggest supporters I have had since Day 1 is Amber she has not only been one of my #1 fan but she has also put in the work whenever I needed her. One of my best friends Vanet helped me create ideas for my business and has always been a huge supporter as well. My girlfriend and mother of my two children Jasmine, has been my main line of support as of late and she even puts in the work when we have big catering gigs or whenever we run short handed. Without all of you guys this puzzle wouldn’t be complete.
I had a 9 to 5, a career in the midst of starting this business. I read a book called When To Jump by Mike Lewis and this gave me the wings I needed to take the leap and go for it. Without all the hard work & people who have been there to lend a helping hand, Thinking Tacos? wouldn’t be where we are today. Thank you to all of you and to those who help me today.
