We had the good fortune of connecting with Christine Amos and we’ve shared our conversation below.
Hi Christine, maybe we can start at the very start – the idea – how did you come up with the idea for your business?
“I grew up in Miami, Florida, and during my youth, I fondly recall attending the annual Miami-Dade County Fair. One of my favorite fair foods was a delicious, juicy roasted corn. As I grew older, my love for roasted corn never waned. After trying my first Mexican street corn, I became hooked on its unique flavor. So, I decided to start making it at home as a midday snack. However, instead of using basic ingredients like mayonnaise, Parmesan cheese, and chili powder, I opted for a more flavorful approach. I began using grilled roasted corn, authentic Mexican crema infused with a blend of herbs and spices, and topped it with soft feta cheese sprinkles, elote seasoning and a hint of lime. This set my corn apart from the typical street corn you might find. I started creating a brand for my corn, and at my very first event, I knew that I had introduced a new, crave-worthy twist that would surely capture Atlanta’s attention in the food vending business. Guests at the event kept coming back for seconds, thirds, and even fourths, often saying the same thing as they reordered, ‘This is the best street corn I’ve ever had!’
Over the course of a few months, I was able to purchase a food trailer, which allowed me to expand my creative menu to what it is today. Alongside my street corn, I’d say that the ‘Fully Loaded Street Fries’ have become extremely popular. They feature that same unique flavor as the Mexican street corn, including freshly cut roasted corn off the cob. We even offer the option of adding salmon to the hot, crispy, seasoned fries. My customers can’t seem to get enough. Personally, I believe it’s all in the sauce!”

Please tell us more about your career. We’d love to hear what sets you apart from others, what you are most proud of or excited about. How did you get to where you are today professionally. Was it easy? If not, how did you overcome the challenges? What are the lessons you’ve learned along the way. What do you want the world to know about you or your brand and story?
What sets me apart from others is my creative menu. I’ve been affectionately dubbed the ‘Atlanta Corn Lady’ or ‘The Corn Lady of Atlanta.’ People often underestimate how much they can love corn until they try ‘Coño on a Cobb.’ For instance, Atlanta is renowned for its wings, and one of the most popular flavors for wing lovers here is buffalo lemon pepper. That’s why I came up with a roasted corn dish topped with buffalo lemon pepper chicken, drizzled with ranch or blue cheese. The slight crunch of the sweet corn kernels will make you think it’s a fried wing right off the bone.
I can honestly say that I wouldn’t be where I am today if it weren’t for my friends and family always endorsing my corn flavors and overall menu, encouraging me to keep going. However, it hasn’t been easy. While my menu is unique, and I currently have no competitors, it takes a lot to market a new brand and get everyone familiar with my business. Verbal support alone doesn’t cover the costs of running a food business.
The only way to overcome the financial challenges of operating a food trailer is to put my faith in God and myself, believing that I will be successful as long as I continue to work hard, nurture my craft, and savor every moment of my experience. I’ve learned numerous lessons on my journey, especially in the catering aspect. Here are a few pieces of advice that I believe every new business owner should take to heart: always accept payment upfront before providing a service, keep meticulous records of your finances, set new goals for each stage of your business, and always prepare your products with love, as love transcends and can propel your business beyond your expectations.
However, there’s more to me than just being the ‘Atlanta Corn Lady.’ I also operate a catering company called ‘Four29 Catering,’ specializing in hors d’oeuvres and small individual plates, which are perfect for our post-COVID lifestyle.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Over the week we can explore the BeltLine on bikes, enjoying the scenic parks. Additionally, we’ll dine on Buford Highway, indulging in authentic Vietnamese, Korean, Mexican, and Colombian cuisines. As the week progresses, we’ll attend one of Atlanta’s local festivals for cultural experiences and entertainment. To wrap up the trip, we’ll head to the Chattahoochee River for a tubing experience—an enjoyable and refreshing activity surrounded by nature, perfect for a sunny day.”
