We had the good fortune of connecting with Ashley Outlaw and we’ve shared our conversation below.

Hi Ashley, what habits do you feel play an important role in your life?
Determination. Which means never giving up! Starting and running a business can be very challenging at times. And in those times, giving up is not an option for me. I have overcome a lot of challenges along the way and I remain focused on the ultimate goal.

Resilience. To me this means being able to adapt in a difficult situation. Running a business, especially a food truck, can present a lot of unexpected scenarios. It’s up to you how you react. I learned early on to be flexible and think on my feet. Days rarely go as planned and you have to be ready with a solution to any problem that gets in your way.

These two habits go hand in hand for me. I started my business with no culinary background, but I was determined to succeed! 3 months after I started my business, Covid-19 shut many businesses down. Thinking quick on me feet, I had to pivot and adjust to my new customer. I was able to stay open during the pandemic and continue to grow my business.

What should our readers know about your business?
I own Nacho Average Truck. I started my mobile food truck at the end of 2019 and was the area’s FIRST nacho truck! No one else had a menu like mine. I offer gourmet nachos, with fresh ingredients! Everything is made from scratch, including the chips!

Before starting my business, I worked in corporate sales for 10 years. Switching careers was a big leap for me! However, I believe my background helped me succeed. When the pandemic first began, a lot of trucks were temporarily shutting down. Most of them were servicing business parks or bars, which were all closed due to the pandemic. I quickly pivoted to find my new customers. I started reaching out HOA members and apartment communities in the area. Most people were working from home and a food truck in their backyard was the ultimate convenience!

Who else deserves some credit and recognition?
It takes a village! I have an amazing family and group of friends, They have supported me along the way, advocated for me and listened to me kick and scream when things get crazy!!
