We had the good fortune of connecting with Abe Ruiz and we’ve shared our conversation below.
Hi Abe, what was your thought process behind starting your own business?
Having been in the business for 30+ years and opened many restaurant concepts, both created and franchised, I really wanted something very different. Something that transported you. If I was going to do this “one more time”, it needed to be a vehicle to a different world, supported by outstanding food and beverage.
Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
Certainly not easy by any means. The restaurant business is one of the hardest, fiercest, and most competitive businesses out there. It is NOT for the faint of heart! And I would not want it any other way. Thus the reason I am in it. What sets me apart from others? I am logical, and very much customer-perspective thinking. I am forward thinking, understanding that what is happening today in the restaurant business is almost the past, it is too late. Need to think always about what is next.
I want my legacy to be that there was NOBODY more committed to this business, from bottom to top. From the newest and youngest dishwasher to the most tenured experienced CEO, I always dedicated myself to every aspect and detail of the restaurant business.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Wow. Atlanta has so much. But I would definitively start in Downtown, in Midtown, and on to the Beltline. And then a trip out to OTP, to the Chatahoochee. And lastly, to the Smoky mountains, and to our wineries. Restaurants and food? Way too many to list! Some of my favorites include Forza Storico, Gunshow, and the Consulate.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I need to recognize Swani Gonzalez, who was the co-creator and inspiration behind the concept. Having roots in Spain really drove the inspiration and the look and feel of the place.
