We had the good fortune of connecting with Kendra & Delaina Elmz and we’ve shared our conversation below.

Commit.

For us, committing is universal and everything. We committed to each other, we committed to a new life, we committed to a new business. Each of those things takes work and sacrifice to do really well. They are scary with a lot of unknowns, expectations, hopes, and dreams wrapped up in the outcome. We commit to showing up for each other and for ourselves. After all, it is a choice every single day to do so and to do so with love, passion, and joy in our hearts.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?

Poppytons Patisserie offers a seasonally rotating menu of fresh, seasonal, and sensational desserts, cakes and pastries. Every element of our goods is scratch-made. We make all of our doughs, jams, glazes, crust, and fillings. Everything. However, we did have to stop ourselves from churning our own butter.

Poppytons Patisserie aims to complement the other amazing bakeries in town by offering dessert and pastry selections that are not provided elsewhere. Our goal is to serve customers looking for a sweet, fancy dessert and fun experience through a unique and inclusive menu that meets many dietary requirements.

We sell through retail, wholesale, custom orders, directly at Proof and around town in our cute little food truck.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?

We would start our days with coffee from BeCaffinated or Goodman followed by an early day hike at one of the local waterfalls. While hiking we’d snack on some LOLO Bars.

After hiking we’d stroll around some of the cute local shopping areas and perhaps grab tea at Wildflower Tea Shop & Apothecary or we may find ourselves next door at Chattanooga Whiskey for a tasting and tour.

For dinner, we’d alternate between Neutral Ground and Lil Oso, two of the best joints in town. Epic food. If we fancied cocktails we’d go to Proof Bar & Incubator where we would be in heaven with any of the house creations, especially any using The Bitter Bottle bitters in their design. For beer and hanging out, we’d certainly find ourselves at either Exile Off Main or The Woodshop. One of the evenings we’d go on a Chatt Taste Food Tour to hit up the highly curated list of wonderful places Brianna Garza has in store for us. We turn down to bed with chocolates from Coco Asante.

After such a big week, we’d get brunch on Saturday from Your Local Seitanist and go lay in a hammock somewhere beautiful.

Who are we kidding? We work 8 days a week. We’d take them to work with us and show them the finer points of baking. All they get to eat our pastries.

Chris has been excited about what we do from the moment we met. He took a chance on us when Poppytons Patisserie was two seconds out from launching. He loves our pastries and lets us experiment with our offerings at his cafe. Chris is always excited about our new flavors and hypes us up with his customers. Chris and his team are such a joy to work with. Not to mention their in-house coffee roasts are stellar.
